I’ve never found someone who doesn’t like these, even if they don’t like tuna! The cream cheese adds a wonderful flavor and creamy texture and the melted Swiss really compliments the tuna.
Mix drained tuna and cream cheese until smooth.
Add minced onion, garlic powder, and salt and pepper to taste.
Spread tuna mixture on one half of the tortilla, sprinkle generously with Swiss cheese, then fold over.
Heat 1-2 tbs. of olive oil in a skillet and fry tortillas until golden brown on both sides.
There is absolutely nothing bland about this chicken recipe. By marinating it for 2 hours in the dry rub, the flavor reaches all the way to the bone. One guest said, “This is the best barbecued chicken I have ever eaten!”
