Description

Make a tasty egg salad sandwich with tofu instead of eggs.

Ingredients

  • 1 box (about 12 To 14 Oz. Size) Firm Tofu
  • 1 teaspoon Turmeric
  • ½ teaspoons Paprika
  • 3 Tablespoons Chopped Parsley
  • 2 stalks Celery Finely Chopped
  • 1 clove Garlic
  • ½ whole White Onion, Finely Chopped
  • Salt And Pepper, to taste
  • 1 Tablespoon Dijon Mustard
  • 2 ounces, weight Mayonnaise
  • 1 teaspoon White Wine Vinegar

Preparation

1. Crumble the tofu in a colander over the sink and carefully drain off the excess water.

2. Place the tofu in a mixing bowl and add the turmeric, paprika, parsley, celery, garlic and onion. Salt and pepper to taste.

3. Mix in the mustard, mayo and vinegar. Check the seasoning again.

This is really all there is to it. Dial the ingredients up or down as you see fit or add your own favorite traditional egg salad ingredients.

I added some dried dill and used vegan mayonnaise to extra-firm tofu so it contains no egg. It’s a little bland, but that could be from the no egg mayo. Making a sandwich I used pumpernickel bread, but still thought it need something else or maybe I was looking for an egg taste.
