Description

Pizza pie: it can be round, it can be square, it can be a figure eight. Pies are round, cornbread is square—not always, though.

Ingredients

  • 1 can (about 14 Oz. Size) Refrigerated Pizza Dough
  • Olive Oil
  • 1 jar (14 Oz. Size) Store-bought Pizza Sauce, Or To Taste
  • 3 cups Grated Mozzarella Cheese
  • 2 cups Green, Red, And Yellow Bell Peppers, Cut In Squares, Or As Needed
  • 1 cup Sliced Mushrooms, Or As Needed

Preparation

Preheat your oven to 400ºF. Get out your blackest baking sheet. Open up the refrigerated pizza dough and then pat it out a little at a time until you are almost covering the entire baking sheet surface. Prick it with a fork like you would a pie crust.

Pour a thin layer of olive oil over the crust and take a pastry brush to it or the back of a big spoon, spreading the oil around. Par-bake in the oven for 5 to 8 minutes, then pour some store-bought pizza sauce over it, however much you like. (We like a happy amount.)

Cover with a thin layer of grated mozzarella cheese. Let set while you dice the green, red, and yellow bell peppers. Barely saute the sliced mushrooms in a little olive oil or butter. Place the peppers and mushrooms strategically over the sauce. Top with all the mozzarella you can get your hands on.

Reduce oven temperature to 375ºF and bake for 20 minutes. Check it at this point and if you think it is ready, have at it; if not, let it cook for 5 more minutes.
