Tequila-Lime Chicken with all the Fixins

Description

A scrumptious marinated, grilled chicken breast you can serve with pico de gallo, refried black beans, and homemade flour tortillas. Wonderfully flavorful!

Ingredients

  • 3 whole Limes, Juiced
  • 5 cloves Garlic, Peeled
  • 1 whole Jalapeno, Sliced
  • 1 teaspoon Kosher Salt
  • ½ cups Cilantro
  • ½ cups Tequila
  • 5 Tablespoons Olive Oil
  • 4 whole Boneless, Skinless Chicken Breasts
  • 1 cup Monterey Jack Cheese, Grated
  • Pico De Gallo
  • Refried Pinto Or Black Beans
  • Mexican Rice
  • Sour Cream
  • Avocado Slices
  • Homemade Flour Tortillas

Preparation

Combine lime juice, garlic cloves, sliced jalapeno, salt, cilantro, and tequila in a food processor or blender. Pulse until combined. Turn on the blender/food processor and drizzle in the olive oil until it’s all combined.

Slightly flatten chicken breasts with a mallet or the bottom of a heavy skillet. Place in a plastic bag and pour in marinade. Seal bag and marinate for several hours or (preferably) overnight.

When ready to cook, remove chicken from bag and place on the grill. Cook until completely done. Toward the end of cooking, top chicken breasts with grated Monterey Jack and allow to melt. (You can also top chicken with cheese and melt under the broiler.)

Serve topped with pico de gallo or salsa, alongside refried black beans, Mexican rice, sour cream, avocado slices, fresh flour tortillas…and whatever other garnishes make you smile!

This is an absolutely delicous meal.

I made this with rum instead of tequila, and it’s still amazingly delicious. Got wide stares of pleasure and ‘feel free to do this again soon!’ all around.

This was awesome! My husband is a beef man, but he was very impressed with this chicken dish. I made Mexican Rice and refried beans to accompany and it was great!

I only tried the marinade (bring a dish cook out) and it was fabulous. I let the chicken soak for over 24 hours and all the flavor was infused. Everyone really liked it – plan on making it very soon.

The Complete Package and I loved this dish. I made a few mistakes, but it still turned out great. First, I failed to read the recipe far enough in advance to marinate it long enough, and then I cooked it indoors on the grill. It would have been better if I’d grilled it outdoors on the charcoal grill, and the marinade didn’t have enough time to really work its magic. I will definitely make this again (and again and again), but next time I’ll be following Ree’s directions to the letter! We had this over a Mexican-style rice, and put homemeade pico de gallo on top, along with some sour cream. It was perfection.

I think next time I make this, I might omit the Tequila or put in less. The chicken was super moist, but there was a strong Tequila aftertaste and it was a bit overpowering for me. I thought it would cook off a bit more and it didn’t seem to at all. If you are at all sensitive to Tequila or do not particularly like the taste of it, I might suggest leaving it out. If you like Tequila, you will absolutely love this recipe! Either way I love trying new recipes. :)

Wow! Not often does every member of the family love something. I served it with black beans and yellow rice, just because I’m not one for homemade refried beans. Delish! Glad I made my husband grill in the rain.

my husband and i had this for dinner last night and it was Amazing! we didn’t have any tequila, but the chicken was still so tender and flavorful! we used it as the meat in burritos the next day and it was great! thank you for sharing this recipe!
