Description

A super easy chicken dinner that’s sure to please. Did I mention it’s topped with bacon?

Ingredients

  • ¼ cups Sour Cream
  • ¼ cups Whole Grain Mustard
  • 3 whole Boneless, Skinless Chicken Breasts
  • 6 strips Cooked Bacon
  • 3 slices Provolone

Preparation

Arrange the oven racks on the upper and lower thirds of the oven. Preheat oven to 425ºF. Spray or grease a baking dish.

In a small bowl, stir together the sour cream and mustard.

Season both sides of the chicken breasts generously with Kosher salt and freshly ground black pepper. Spread both sides of the chicken with the mustard mixture.

Place in the prepared dish and bake for 25 minutes on the rack in the lower 1/3 of the oven. Remove from the oven and place 2 strips of cooked bacon criss-crossed over the top of each chicken breast. Top each with a slice of provolone cheese.

Return to the oven, this time to the rack in the upper 1/3 of the oven, and bake 10 minutes more.

This was pretty good. Used turkey bacon instead of regular bacon. Probably didn’t need to salt it before putting the other stuff on. Very powerful taste but not too strong. Would make again.
