Description

The brie adds a delicious creamy texture to the pasta!

Ingredients

  • ½ pounds Whole Wheat Farfalle Pasta
  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • 1 bag (6 Oz. Size) Baby Spinach
  • ½ cups Sun-Dried Tomatoes, Chopped
  • 8 ounces, weight Brie Cheese, Rind Removed And Cut Into Small Cubes
  • 2 Tablespoons Half-and-half
  • 1 Tablespoon Crushed Red Pepper
  • Salt And Pepper
  • Grated Parmesan Cheese, For Garnish (optional)

Preparation

Cook pasta according to package directions.

Meanwhile, heat a large stove top pan over medium high heat. Add olive oil and garlic and cook for about 1 minute. Add spinach and sauté over medium low to medium heat until it cooks down, stirring occasionally.

Add sun-dried tomatoes, cooked pasta, cheese, half-and-half and crushed red pepper. Stir together until cheese melts. Season with salt and pepper.

Serve with parmesan cheese if desired. Enjoy!

This has become a regular in my house. It is easy to make and tasty. The red pepper flakes really stand out and make this dish interesting. I like mine a bit saucier, so I double the amount of half & half (or even triple it).
