The brie adds a delicious creamy texture to the pasta!
Cook pasta according to package directions.
Meanwhile, heat a large stove top pan over medium high heat. Add olive oil and garlic and cook for about 1 minute. Add spinach and sauté over medium low to medium heat until it cooks down, stirring occasionally.
Add sun-dried tomatoes, cooked pasta, cheese, half-and-half and crushed red pepper. Stir together until cheese melts. Season with salt and pepper.
Serve with parmesan cheese if desired. Enjoy!
