Description

This homemade Spicy Turkey Meatballs with Veggies recipe is healthy and full of flavour. It is made with carrots, mushrooms, peppers and onions. Enjoy!

Ingredients

  • 1 pound Extra-Lean Ground Turkey
  • 1 cup Yellow Pepper, Chopped
  • 1 cup Mushroom Chopped (any Type Of Your Preference)
  • ½ cups Carrots, Chopped
  • 1 cup Onion, Chopped
  • ½ cups Parsley, Chopped
  • ¾ cups Whole Wheat Breadcrumbs
  • 2 whole Eggs
  • ½ Tablespoons Garlic Powder
  • 1 teaspoon Coriander
  • 1 teaspoon Cumin
  • ½ teaspoons Chili Pepper Powder
  • Salt And Pepper, to taste

Preparation

Preheat the oven to 400°F. In a large bowl combine extra-lean ground turkey, yellow pepper, mushrooms, carrots, onion, parsley and whole-wheat breadcrumbs and mix carefully.

In a medium bowl, lightly beat the eggs then add all the rest of the ingredients (the seasonings) and mix well. Pour the wet ingredients into the veggies and meat mixture bowl. Use your hands to mix everything together and roll the mixture into your preferred size meatballs.

Spray oil cooking spray on a rimmed baking sheet and place the meatballs on it in a single layer and so they aren’t touching. Bake for approximately 25-30 minutes or until they are evenly brown. When they have finished baking, you can serve with a delicious tomato sauce and whole wheat spaghetti.
