Description

Spinach spaghetti pie.

Ingredients

  • 1 package Frozen Chopped Spinach
  • 1 package Spaghetti
  • 1 pound Pork Sausage
  • 1 whole Onion
  • ½ cups Parmesan Cheese, Divided
  • 2 Tablespoons Butter, Divided
  • 2 whole Eggs, Divided
  • 1 can Tomato Sauce (small)
  • 8 ounces, weight Cream Cheese
  • 8 ounces, weight Cottage Cheese
  • Bread Slices, For Topping

Preparation

You will need to do several things at once. The night before cooking this, you need to thaw out the spinach.

First cook the spaghetti. While the spaghetti is cooking, in another pan cook the pork sausage and onion.

When the spaghetti is done, mix it together with 1/4 parmesan cheese, 1 tbsp of butter and 1 egg.

After the pork and onion have finished cooking, add the (small) can of tomato sauce. Simmer for 7 minutes.

In another bowl combine the cottage cheese, drained spinach, cream cheese and one egg. After all is smoothly combined, you can start your casserole assembly.

In a casserole dish, the first layer is the spaghetti mix. The second layer is the pork mixture. The third layer is spinach mixture. Put it in the oven at 350F for 25 minutes.

While the casserole is cooking, cut up the bread in cubes. On the stove, melt the remaining butter and put the cubes in the pan with 1/4 cup of parmesean cheese. Sautee until crispy and golden brown. Put on top of the casserole and cook for another 10 minutes. Take it out, let it sit for 5 minutes and enjoy!
