Description

Mac and Cheese

Ingredients

  • 16 ounces, weight Macaroni Noodles
  • 1 stick Butter/margarine
  • 2 Tablespoons Flour
  • 2 cups Milk
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 pinch Nutmeg
  • 2 cups Cheddar Cheese
  • 8 ounces, weight Velveeta

Preparation

First cook the macaroni to al dente (according to package instructions for al dente). When it’s done, drain and rinse with cold water to stop the cooking.

In a medium pot melt butter over medium-low heat, add flour and whisk together for 5 minutes to get the “flour taste” out. Then pour the milk into the pot and stir until it thickens. Add the salt, pepper, and nutmeg. The nutmeg amount is just a sprinkle – or to taste.

Take out the Velveeta and cut the bar in half. Only use one half of the bar and cut that half into cubes. Pour in the cheeses (shredded cheese and Velveeta) and continue to heat and mix until melted.

Combine the cheese mixture with macaroni and place in casserole dish. Bake in the oven at 350F for 15 minutes or until bubbly and slightly brown. Enjoy.
