Description

Super simple slow cooker turkey mole chili.

Ingredients

  • 40 ounces, weight Lean Ground Turkey
  • 1 whole Large Onion, Chopped
  • 3 whole Large Carrots, Chopped
  • 1 cup Corn
  • 1 can (28 Oz) Diced Tomatoes, With Juice
  • 1 can (15 Oz.) Black Beans, Drained And Rinsed
  • 1 jar (8 1/4 Oz.) Mole
  • 1-¾ cup Chicken Broth
  • Sour Cream Or Plain Greek Yogurt
  • Cotija Cheese

Preparation

In large non-stick skillet, cook ground turkey over medium-high heat (roughly 5-7 minutes), stirring frequently, until no pink remains. Spray a 4-5 quart slow cooker with cooking spray. Add turkey and remaining ingredients except cream/yogurt and cheese.

Cover and cook on the low heat setting for 8 to 10 hours. Stir well before serving.

If desired, top with sour cream/Greek yogurt and a sprinkling of cheese. Consume with unabashed relish.

I’m betting ground beef would be delicious! As for shredded chicken, I’m not sure how you’d work it out in a slow cooker. Maybe just add raw chicken in the beginning, but it sounds good, too!

This was really good! I LOVE that you just dump everything in the crock pot without measuring, it was so easy! I found the chili needed a little salt at the end, but otherwise the flavor was amazing. Personally, it was really meaty for my taste, and I really really like Mole, so next time I think I’m going to add half the turkey and a little bigger jar of mole. Thanks for the fantastic recipe, I think it cost me something like $10 total to make and it filled the entire crockpot!

SO SO delicious!! I am a huge fan of easy crock pot recipes and my fiancé is not a fan of “weird” food so this was a huge success!!!
