Description

A delicious meal for a busy weeknight.

Ingredients

  • 2 Tablespoons Olive Oil, Divided
  • 2-½ pounds Boneless Pork Loin Or Pork Roast
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Onion Powder
  • ½ cups Low Sodium Soy Sauce
  • 2 Tablespoons Honey
  • 2 Tablespoons Tomato Paste
  • 1 teaspoon Garlic, Minced
  • 2 Tablespoons Brown Sugar
  • 1  Large Sweet Onion, Sliced
  • 1-2 Green Peppers, Sliced
  • ½ cups Pineapple Chunks (optional)
  • 10  Flour Tortillas
  • 1-½ cup Shredded Monterey Cheese (optional Garnish)

Preparation

Heat 1 tablespoon olive oil in a large skillet over medium heat. Season pork with salt, pepper, garlic powder and onion powder and brown all sides, about 3-4 minutes per side.

In a small bowl combine soy sauce, honey, tomato paste, garlic, brown sugar and stir until combined.

Spray slow cooker with nonstick cooking spray. Place onions and green peppers in slow cooker. Place browned pork on top and pour marinade on top of pork, followed by pineapple chunks (optional).

Cook on low for 8 hours or on high for 4-5 hours. Remove pork from slow cooker and place on cutting board. Shred pork using 2 forks to pull apart. Place shredded pork back into slow cooker and stir to coat with marinade, onions and peppers. Turn to warm/low and let shredded pork absorb the marinade for another 30 minutes.

Season with additional salt and pepper to taste.

Place desired amount of pork mixture on a warmed fajita. Top with cheese and serve, or serve over rice.
