Description

Taco night comes about twice a week at our house, we really enjoy the freshness and variety of tacos – there are endless possibilities!!!

Ingredients

  • FOR THE ASSEMBLY:
  • 1-½ pound Cooked Shrimp (you Can Cook Them However You Like Boil, Bake, Fry, Steam, Saute)
  • 2 cups Shredded Lettuce
  • 12 whole Corn Tortillas Taco Shaped, Fry To The Crispness You Like

  • FOR THE SOUR CREAM SAUCE:
  • 1 cup Sour Cream
  • 1 whole Lime, Juiced
  • 1 Tablespoon Frank's Hot Sauce
  • 1 Tablespoon Chopped Cilantro
  • _____
  • FOR THE GUACAMOLE:
  • 2 whole Avocados, Peeled, Pitted And Roughly Chopped
  • 1 Tablespoon Chopped Cilantro
  • 2 teaspoons Lime Juice
  • 2 whole Cloves Garlic, Minced
  • 1 Tablespoon Diced Red Onion
  • ¼ teaspoons Salt (or More To Taste)

  • FOR THE PICO DE GALLO:
  • 2 whole Tomatoes, Diced
  • ½ cups Cilantro, Diced
  • 1 Tablespoon Freshly Squeezed Lime Juice
  • ¼ cups Diced Red Onion
  • 1 whole Clove Garlic, Grated On Microplane
  • ¼ teaspoons Salt, More Or Less To Taste

Preparation

Prepare pico de gallo, guacamole and sour cream sauce.

Fry tortillas in some oil over medium high heat, shaping them into the shape of a taco shell. You can use a pan full of oil or just a small amount covering the bottom of a frying pan. Set shells aside.

Pico de Gallo: Mix all ingredients well set aside.

Guacamole: Put all ingredients in a bowl and mix around with a spoon. Do not mush, leave some chunks of avocado!!

Sour Cream Sauce: Stir all ingredients well.

Shrimp: Clean shrimp and devein. Cook however you like. I sauteed mine for a few minutes over medium heat in a bit of oil – cook until nicely pink. Once cooked pour sour cream sauce over shrimp and stir until all shrimp are coated.

Assemble tacos. Take a cooked shell and add a spoon full of shrimp. Top with lettuce, guacamole and pico de gallo. Eat!!
