Description

A quick (and delicious) throw-together pasta dish you finish off in a foil parcel in the oven. Server right out of the foil for a fun presentation!

Ingredients

  • ½ cups Olive Oil
  • 4 cloves Garlic, Minced
  • 3 whole (14 1/2 Oz. Size) Diced (or Whole) Tomatoes
  • ½ cups White Wine
  • 2 pounds Jumbo Or Large Shrimp, Peeled And Deveined
  • Salt And Pepper, to taste
  • Fresh Parsley, Minced
  • 1 pound Linguine, Uncooked
  • Red Pepper Flakes, to taste

Preparation

Cook pasta for 1/2 the recommended cooking time. Pasta should still be very firm.

In a large skillet or pot, heat olive oil over medium heat. Add garlic and saute for a minute. Dump in the tomatoes and wine. Stir the mixture together, season with salt and pepper, and allow to cook for ten minutes.

Meanwhile, prepare a large parcel of heavy duty aluminum foil. It should be large enough to hold the entire pasta dish.

Throw the shrimp on the top of the pasta sauce. Throw the drained pasta over the top, then pour the whole dish onto the foil. Tightly wrap the foil into a parcel.

Bake at 350 degrees for 15 minutes. Remove from oven and keep warm until serving.

Open the foil parcel right before serving. Drizzle a tiny bit of olive oil over the top. Squeeze on lemon juice, if desired.

I made this the other night and loved it! Very simple and easy to make. The only thing I would change is to add some tomato sauce to thicken it up a bit. Overall, very good!

Delicious! My husband loved it and so did my 2 year old who loves shrimp. I also did what the previous poster did after reading reviews and used the Hunts Diced Tomatoes with basil, garlic, and oregano for some extra seasoning. Very easy dish to make and I loved having no pots to clean up after eating!

Not much flavor and the foil package thing is more finicky/messy than I expected. But the pasta is cooked just right.

One of my go-to meals for shrimp. I’ve also made it with chicken thighs and it’s great. I’ll usually make more than we need and it’s even better the next day!

Gotta tell you, I totally doubted that the pasta would be done like we like it. I should have known better than to doubt Ree!!! Pasta was PERFECTLY done!! The only things we changed were out of necessity….the teenager hates shrimp, so we grilled those and hubby & I added to our own bowls….and we didn’t have parsley so I used fresh basil. All in all, SOOOOOOO simple and delicious!!! Thanks again, Ree!

I’ve been wanting to make this dish for some time now, and I’m so glad that I finally did! It was delicious – just the right flavor/amount of spice. It was simple and quick to prepare. My husband and children (ages 7-16) gobbled it right up! My oldest son even requested that I make it for the football team pasta dinner even though he doubts there would be any left for him once he got through the line because he’s a sophomore!
