Description

This is a great one dish meal. Red Bliss Potatoes, sweet potatoes, butternut squash, chicken sausage and seasonings all roasted up in the oven. My kids did not even know there was squash in there hehehe….

Ingredients

  • 3  Large Red Bliss Or New Potatoes
  • 1  Large Sweet Potato
  • 1  Small Butternut Squash
  • 1  Medium Onion Peeled And Quartered, Layers Separated
  • 2 cloves Garlic, Chopped
  • 2 teaspoons Extra Virgin Oilve Oil
  • 1 teaspoon Fresh Or Dried Rosemary
  • 1 teaspoon Italian Seasoning
  • ½ teaspoons Garlic Powder
  • Kosher Salt And Freshly Cracked Black Pepper To Taste
  • 1 pound Italian Chicken Sausage, Each Link Cut Into 6 Slices

Preparation

Preheat oven to 375 degrees F.

Cut red potatoes into 1 inch pieces, peel the sweet potato and the squash (cleaning as well) and cut them into 1 inch pieces. Add to a large mixing bowl.

Add the onion, garlic, olive oil, rosemary and Italian seasoning, garlic powder, salt and pepper combining well. Place on a parchment lined baking sheet (use a rimmed baking sheet), using the parchment to prevent sticking.

Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through. Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don’t burn.
