Description

Salty and savory sandwich with a garlicky spread, sauteed kale and caramelized shallots and smoked prosciutto.

Ingredients

  • 2 teaspoons Olive Oil
  • 2 whole Shallots, Sliced
  • 2 cloves Garlic, One Minced, One Left Whole
  • 1 cup Fresh Kale, Cut Into 1-inch Pieces
  • Salt And Pepper, to taste
  • 4 slices Sandwich Bread
  • 4 ounces, weight Goat Cheese
  • 4 slices Prosciutto

Preparation

Heat olive oil in a medium-sized skillet over medium heat. Add the shallot and both cloves of garlic (one minced and one whole) to the pan and cook until caramelized and very fragrant, about 10 minutes. Remove the whole garlic clove and set it aside.

Add the kale into the pan and sauté until wilted and softened. Transfer the mixture into a bowl and season with salt and pepper.

While the kale is wilting, toast four slices of bread. Meanwhile, place the goat cheese and the whole clove of garlic into the food processor and pulse until smooth.

Spread the goat cheese mixture onto two slices of bread. Add two slices of prosciutto on top of the goat cheese on both slices, and top with the shallot/kale mixture. Top with the additional slice of bread and serve.

Cassie’s Notes:
Spinach would be a great alternative to the kale in this sandwich. If you don’t like goat cheese, try feta or blue cheese instead.
