Description

This is the best kind of chicken served cold. Make it a day before your camping trip or picnic and bring it along with you; it’s a little bit of that sweet and salty, with crispy skin, and a little kick of heat if you like it.

Ingredients

  • 5 pounds Bone-in, Skin-on Chicken Pieces
  • 2 Tablespoons Kosher Salt
  • 3 Tablespoons Brown Sugar
  • 2 Tablespoons Chili Powder
  • 2 Tablespoons Paprika
  • 2 teaspoons Pepper
  • ¼ teaspoons Cayenne Pepper

Preparation

Rinse and pat chicken dry with a paper towel. Set aside. Combine remaining ingredients in a large bowl. Rub each chicken piece with the dry rub, making sure to get under the skin, covering the whole piece of chicken. Set the chicken on a cooling rack set on a foil-lined cookie sheet. This will help to avoid soggy chicken and a ruined pan. Tent the chicken with foil and refrigerate for at least 6 hours, and up to one day.

When you’re ready to bake, heat oven to 425ºF with a rack set to the middle position. Bake the chicken for 15-20 minutes, until the thickest part reaches an internal temperature of 140ºF. Then turn up the heat to 500ºF. This makes for a crispy skin! Continue baking until the chicken reaches 160-165ºF. This will take 5-8 minutes longer.

You may need to take the smaller pieces out first, and let any larger pieces continue baking.

Cool the chicken completely before serving. It’s delicious, you won’t regret it.

Just wanted to come back to this cause I’ve made it sooo many times now. My family prefers the boneless skinless chicken thighs. Be sure not to over cook them, I did 350 degrees for about 40 minutes and they were perfect. I have gotten requests for this chicken several times! Thank you again for sharing it!

This chicken was amazing! My family loved it and complained cause I made too little. The only thing I did differently was used boneless/skinless chicken breasts cause that is all I had and was anxious to try it! Still fabulous! It is going into our finder of favorites! Thank you!

I’m trying to get every last ounce of BBQing that I can before the mountain snow arrives! So I actually cooked this on the BBQ! I agree it is one of the best chicken recipes! Wonderful, wonderful flavor – a little sweet but a little spicy at the same time and a such a lovely color! I can definitely see how this would be good as ‘picnic chicken’. I will be making this again and again. Thanks for sharing:D

Just didn’t crisp up even leaving it in the oven for twice as long as recommended. The rub was pretty good, but not so much on the sweet side as the chili powder side. But not too bad, just not as awesome as I expected.
