Description

This yummy pasta dish has an unexpected blue cheese flavor and a bunch of wilted spinach. Delicious!

Ingredients

  • 1-½ pound Pasta (angel Hair Or Thin Spaghetti)
  • 2 Tablespoons Olive Oil
  • 3 cloves Garlic, Minced
  • 1 whole (28 Oz. Size) Diced Tomatoes, Drained
  • Dash Of Sugar
  • Salt And Freshly Ground Black Pepper, To Taste
  • Crushed Red Pepper Flakes, To Taste
  • ¾ cups Crumbled Blue Cheese
  • ¾ cups Heavy Cream
  • 4 cups Baby Spinach
  • Half-and-Half, for thinning
  • Extra Blue Cheese Crumbles, For Garnish

Preparation

Cook pasta according to package instructions.

In a large skillet over medium heat, add olive oil. When hot, add minced garlic and cook for a minute. Pour in drained tomatoes. Add sugar, salt, pepper, and crushed red pepper to taste. Cook for 10 to 15 minutes, stirring occasionally.

Reduce heat to low. Stir in crumbled blue cheese. Add cream and stir, then a little splash of half-and-half if sauce is too thick. Cook for a minute or two, tasting and adding more seasonings as needed.

At the very, very, very last minute. toss in spinach. Immediately toss in the cooked and drained pasta. Serve immediately!

This was pretty good! I liked it, as did my Mother. My husband was a little iffy about it, but he’s not a big fan of cream based sauces.

Made this for a girly date night with my friends and we were fighting over the last serving and practically licking the bowl. The blue cheese and spinach are amazing and the red pepper flakes give it a fabulous little kick. DELISH!!!

The Hubs and I really loved this one! Definitely will reappear on our menu as a quick weeknight meal. We used one full box of wheat spaghetti pasta because I like plenty of pasta sauce on my noodles, and there was more than enough for the box.

Oh yum! I added more garlic, a little more gorgonzola, some nutmeg, and used frozen creamed spinach, and it was still soooo good! The gorgonzola really came through in this, and it was just an all around hearty, very tasty dinner. Hubby thought so too!

This is my new favorite “go-to” pasta dish. It’s so easy. I’m missing it terribly right now, as I’m pregnant, and can’t have blue cheese. I highly recommend…excellent dish!

I loved the creamy blue cheese texture. I think next time I need to add a bit more salt, pepper, and chili flakes to give it a bit more of a kick. I didn’t put much in because I didn’t know if it would take away from the blue cheese. I never know if my “pinch” is too much so I err on the side of caution. Now I know to put more in my pinches! :) Yummy!
