Description

An indescribably delicious pasta dish brimming with basil flavor and peppered with fresh diced tomatoes.

Ingredients

  • ¾ cups Fresh Basil Leaves
  • ½ cups Grated Parmesan Cheese
  • 3 Tablespoons Pine Nuts
  • 2 cloves Garlic, Peeled
  • Salt And Pepper, to taste
  • ⅓ cups Extra Virgin Olive Oil
  • ½ cups Heavy Cream
  • 2 Tablespoons Butter
  • ¼ cups Grated Parmesan (additional)
  • 12 ounces, weight Pasta (cavitappi, Fusili, Etc.)
  • 2 whole Tomatoes, Diced

Preparation

Cook pasta until al dente.

Add basil leaves, 1/2 cup Parmesan, pine nuts, and salt and pepper to a food processor or blender. Turn machine on, then drizzle in olive oil while it mixes. Continue blending until combined, adding additional olive oil if needed. Set aside.

I’ve made this twice now and both times it was great!! The second time I didn’t have heavy cream and used cream cheese and milk instead…. I liked it more the second time!

This was delicious. Made it with fresh tomatoes and basil from my garden. Found a no fat substitute for the heavy cream. Take 1/2 cup non-fat milk and whisk in 1 Tbsp. cornstarch and 1/2 Tbsp. flour. You’ll never know it was non-fat.

This was great even though I didn’t include pine nuts for the pesto. I also added chunks of chicken. My husband thought this was better than the homemade chicken Alfredo I usually make.

This was just okay. I feel like it lacked substance and flavor.
