I’ve been so nostalgic for New Orleans cuisine lately, which made this oh so satisfying.
Heat oil in a large skillet (make sure it’s big enough to house pasta and sauce, etc) over medium heat. Add shallots and garlic and cook for about 2 minutes, stirring. Add sausage and cook 2 minutes, stirring occasionally. Add mushrooms and cook about 4 minutes, stirring occasionally. Add 2 tablespoons of the parsley and the spinach. Toss and cook until spinach is just wilted. Remove pan from heat.
Heat butter in a medium skillet over medium high heat. Add shrimp and season with 1/2 teaspoon of Creole seasoning blend stir to combine. Cook 2 minutes, season and turn. Cook another 2 minutes. Add remaining parsley and toss to combine. Remove from heat.
Combine 2 tablespoons of Creole seasoning blend with the Alfredo sauce and mix well to incorporate.
Add the cooked pasta to skillet with sausage and veggies. Add sauce and toss to coat and continue to cook until sauce is heated through.
Divide the pasta and sauce between 4 dishes and top with shrimp.
