Description

I love the use of pork in this Mexican dish. It’s a nice change from the usual beef or chicken.

Ingredients

  • 6 whole Pork Chops, Boneless
  • 1 whole Onion, Chopped
  • 1 whole Green Pepper, Chopped
  • 2 cups Corn Kernels, Fresh Or Frozen
  • 1 can (14 Oz) Diced Tomatoes
  • 1 can Black Beans, Rinsed And Drained
  • ½ cups Salsa
  • 1-½ teaspoon Dried Oregano
  • ½ teaspoons Cumin

Preparation

Preheat oven to 350F.

In a large skillet, brown the pork chops for 2 minutes on each side. You are not cooking them through, you are just getting some color on them. Place pork chops in a 9×13 baking dish.

In the same skillet, cook the onion and peppers until softened, about five minutes or so. Add the corn, tomatoes, black beans, salsa, oregano and cumin. Cook for about 5 minutes, or until heated through. Pour over pork chops in baking dish. Bake for 45 minutes or until chops are cooked through.

**The tomato/corn/bean mixture is also great as a salsa or side dish!
