Creamy mashed potatoes topped with crispy chicken, corn, and cheese, drizzled with warm gravy.
Boil potatoes in water. Meanwhile, prepare gravy according to packet instructions.
Lightly sprinkle chicken with salt and pepper and prepare beer batter using the mix and water or beer, following the measurements on package instructions. (One package of mix should yield about 1 1/2 cups beer batter.) Let chicken sit in the batter until you’re ready to fry.
Fry chicken in deep fryer, or in oil on the stove.
Drain water from potatoes once thoroughly cooked and mash, adding butter and milk. Remove cooked chicken from oil and place on paper towels to soak up excess oil.
Heat corn in microwave for about 45 seconds.
Scoop potatoes into bowls and top with chicken, shredded cheese, and corn. Drizzle gravy on top.
