Description

A delicious, easy, kid-friendly recipe with a surprise ingredient that you can’t let scare you away… light mayo! Adapted from a recipe my friend Steph gave me, this was unexpectedly delicious! See my related blog post for variations!

Ingredients

  • 1 pound Your Favorite Short Pasta (I Used Rotini)
  • 3 cups Shredded Sharp Cheddar Cheese
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 1 cup Light Mayonnaise
  • ½ cups Milk
  • 2 teaspoons Each, Salt And Pepper (to Taste)

Preparation

Preheat oven to 350 degrees (F).

Cook noodles until al dente (according to package instructions for al dente) and then drain. Put pasta back in your pot and add remaining ingredients and stir until completely combined. Add salt and pepper to taste as necessary.

Transfer to an oven safe casserole dish or pan. Cook uncovered for 15 – 20 minutes or until heated through.

i was a little nervous with the mayo… i did cut the amount down a bit and i added a can of chunk chicken to the pasta. i also sprinkled some crushed ritz crackers on top before baking. was very good. my husband and son loved it!
