Description

This pasta is so easy and super fresh tasting. It is one of my favorites!

Ingredients

  • 1 pound Linguine Noodles
  • 1 teaspoon Extra Virgin Olive Oil
  • 2 whole Shallots, Minced
  • 1 clove Garlic, Minced
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 cup Heavy Cream
  • 1 whole Lemon, Zest And Juice
  • ½ cups Parmesan Cheese, Grated

Preparation

In a large pot of salted boiling water, cook the pasta according to package directions. Reserve 1 cup of the pasta water, drain pasta and return past to pot. Set aside.

Meanwhile in a small pot heat oil over medium heat. Add shallots and garlic and season with salt and pepper. Cook, stirring until tender, about 4 minutes. Add in the cream and lemon zest. Bring to a boil and cook until a little thickened, about 8 minutes. Add in the lemon juice and season with salt and pepper to taste.

Pour the cream sauce over the pasta and toss, add in enough pasta water to create a thin sauce that coats the pasta. Stir in 1/4 cup or so of the grated Parmesan cheese.

Serve! Top each serving with a little of the remaining Parmesan cheese.

You can squeeze a little extra lemon juice on top before serving as well if you like lots of lemon like I do!

Excellent! You would think it would be rich with all of the cream but it is very refreshing and light. Will definitely make this again.

I made this last night for a friend who just had a baby and being a new recipe I *had* to try it before I served it to someone else. Boy am I glad I did!! This dish was super easy to make, nice and light, and a perfect spring or summer pasta dish. It was very fresh tasting, and I agree that the parmesan cheese can NOT be excluded! I tried it both ways and it definitely adds a little bit of wonderful-ness! Definitely will be making this again, thank you thank you thank you!

Made this tonight; it was the perfect light pasta dish. It’s not easy to make pasta light, but the lemon comes through just right to make this refreshing. Plus, the ingredients are all items most of us have around. The Parmesan cheese is a -must-. :) Delicious.
