Description

A great spring pasta!

Ingredients

  • 16 ounces, weight Box Angel Hair Pasta
  • 1 whole Rotisserie Chicken, Meat Removed From The Bones Then Shredded
  • 1 box (10 Oz. Size) Frozen Spinach, Thawed And Squeezed Dry
  • 1  Large Lemon, Juiced
  • Red Pepper Flakes (optional)
  • Olive Oil, Enough For Drizzling To Your Preference
  • Shredded Parmesan Cheese
  • Salt And Pepper, to taste

Preparation

Bring a pot of water to a boil and cook pasta according to package instructions. Then drain off the water.

In a large bowl combine pasta, chicken, spinach, lemon juice and red pepper flakes if using. Drizzle with olive oil and sprinkle with Parmesan cheese. Add salt and pepper to taste. Toss and serve with a side salad.
