Description

All the best of perogies, in a casserole form.

Ingredients

  • 12 whole Lasagne Noodles
  • 2 cups Prepared Mashed Potatoes
  • 1 cup Shredded Cheddar Or Monterey Jack Cheese
  • ½ teaspoons Salt
  • ⅛ teaspoons Pepper
  • 2 cups Cottage Cheese
  • 1 whole Egg
  • ¼ teaspoons Onion Salt
  • 1 can Cream Of Mushroom Soup (10 Oz. Can)
  • 1 cup Milk
  • ½ cups Butter Or Margarine
  • ½ whole Onion, Chopped
  • 1 cup Chopped Green, Red, Or Yellow Peppers
  • 1 pound Smoked Sausage, Cooked And Sliced
  • 2 cups Shredded Cheddar Cheese

Preparation

Preheat oven to 350 F. Cook the noodles as directed on the package. When done, drain them.

Grease two 9×9 pans or one 9×13 pan plus 1 small loaf pan. If you use 4 noodles per layer you will have enough for 3 layers.

In one bowl, stir together the mashed potatoes, cheese, salt and pepper. Set aside.

In another bowl, stir together the cottage cheese, egg and onion salt. Set aside.

In another bowl, stir together the mushroom soup and milk until smooth. Set aside.

In a skillet over medium heat, melt butter. Add the onion and peppers and saute until soft. Stir in the sausage rounds.

Assemble the casserole as follows in the prepared pan(s). A third of noodles, all of the potato mixture, a third of the noodles, all of the cottage cheese mixture, a third of the noodles, all of the peppers and sausage, all of the soup mixture, and top with the shredded cheddar cheese.

Cover the pan with a sheet of foil and bake at 350 F for 30 minutes. Uncover and bake 10 minutes longer if needed.
