Description

Here’s a quick and easy recipe for you to try, sure to please your entire family!

Ingredients

  • 6 whole Red Potatoes, Cubed
  • ¼ cups Water
  • ¾ pounds Smoked Kielbasa, Cut Into 1/4" Slices
  • 1 cup Chopped Onions
  • 1 cup Bell Peppers (Green, Yellow And Red Mixed)
  • 1 clove Minced Garlic
  • 2 Tablespoons Olive Oil
  • 3 Tablespoons Brown Sugar
  • 3 Tablespoons Cider Vinegar
  • 1 Tablespoon Honey Mustard
  • 1 Tablespoon Parsley
  • ½ teaspoons Dried Thyme
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Pepper
  • 5 strips Bacon, Cooked And Crumbled

Preparation

In a microwave-safe dish, cover and cook potatoes in the water for 4-6 minutes, until tender. Drain water.

In a large skillet, saute kielbasa, onion, peppers, and garlic in oil until vegetables are tender. Add potatoes and cook 7-10 minutes longer until potatoes are lightly browned.

In a small bowl, combine brown sugar, vinegar, mustard, parsley, thyme, salt, and pepper. Stir into skillet and add bacon. Continue simmering for 3-5 minutes until heated through.

Serves 4.

This was very yummy and delicious. My husband loved this dish and brought the leftovers to work. His co-workers asked if they could try it because it smelled so good! Now they want the recipe. This is a keeper for sure, thank you for sharing!

I also doubled the turkey kielbasa, used 4 Idaho potatoes, 2 bell peppers, and everything else as written. It was WONDERFUL – the sauce was reminiscent of German potato salad… YUMMY! – thanks!
