Description

A great way to go green for St. Patrick’s Day.

Ingredients

  • 1 whole Granny Smith Apple (Or Any Type That You Have On Hand)
  • 2  Large Garden Spinach Herb Wraps (Or Your Favorite Wrap Or Flour Tortilla)
  • ¼ cups Plus 2 Tablespoons Mayonnaise
  • 3 Tablespoons Dijon Mustard
  • 6 slices Thinly Sliced Deli Ham (or More As Desired)
  • ½ teaspoons Coarse Ground Pepper
  • ¼ cups Crumbled Blue Cheese
  • 2 cups Lightly Packed Fresh Spinach, Cut Into Strips
  • 4  Very Thin Slices Of Red Onion (Optional)

Preparation

With the skin still on, cut the apple in half from the top to the bottom of the apple. Then cut each half into slices (around the core) that are about ¼ of an inch thick. Set aside.

Lay the wraps on a large cutting board or plate and spread the mayo and mustard on each.

Add the ham, kind of “fluffing” it up rather than laying it flat. Sprinkle the pepper on top of the ham. Lay the slices of apple, the blue cheese, the spinach and the onions on top of the ham.

Gently fold the right and left sides of the wrap inwards about 1-1/2 inches on each side. Roll the wrap starting with the end closest to you towards the other end like you would a burrito. Cut in half on a diagonal. Serve alone or with soup or salad.

This has been in my recipe box for a long time. Had all of the ingredients and so made them tonight. So good! The combination of flavors maybe sounds weird but they definitely worked together. Enjoyed the wraps and will make again.
