Description

Sweet and spicy, this grilled chicken is marinated with chipotle peppers, honey and lime juice.

Ingredients

  • 6 whole Chicken Drumsticks
  • 1 can (7 Ounces) Chipotle Peppers In Adobo Sauce
  • 2 Tablespoons Honey
  • 1 teaspoon Distilled White Vinegar
  • 1 clove Garlic
  • 1 whole Lime, Juiced
  • ¼ teaspoons Kosher Salt, Plus More For Seasoning Chicken

Preparation

1. Rinse and pat dry the chicken.
2. Combine chipotle peppers, honey, vinegar, garlic, lime juice and 1/4 teaspoon salt in a food processor. Process until it becomes a paste.
3. Place chicken in a glass dish, lightly season with salt. Transfer 1/4 cup of the marinade to a bowl and set aside. Spread remaining marinade over chicken and turn to coat completely. Cover and refrigerate for at least 2 hours.
4. When ready to cook, heat grill over medium heat. Grill chicken until browned on all sides, turning once and brushing with reserved marinade. Cooking time is about 25 – 30 minutes depending on the size of the chicken legs. Chicken is done when it is punctured and juices run clear.
5. Transfer to a serving platter and serve hot.

Yum! I used 4 chicken breasts instead of drumsticks. Just so happened that we didn’t end up grilling last night so it marinated all night. It was pretty spicy but we sliced it up for fajitas and it was really tasty! Easyand simple ingredients make this just right for my family.

I had my family over for dinner the other night and wanted to do something a little different than my usual grilled BBQ chicken. This was SO delicious! We all love spice – and the marinade/sauce was amazing -just the perfect amount of heat, and then the honey balances it out before it gets to be too much! Easy and delicious – definitely keeping this one around for more cook-outs this summer!

The flavor was very tasty, but I totally agree with the previous review about it being too spicy. I have never cooked with chipotle peppers so maybe I should have know. If there is a way to tone down the spiciness just a tad this would be my new favorite because the flavor is amazing with chicken!

I was excited to try this after reading the reviews – unfortunately, we were not impressed. It was SO over-the-top spicy that it was almost inedible. And I only used half of the can of peppers! Don’t get me wrong – we do enjoy spicy foods – but this was so spicy that you couldn’t even taste the lime or honey or garlic – the only way we could eat it was to dip it in a sweet BBQ sauce. :(

I loved this recipe! We used boneless, skinless chicken breasts and they were delicious – nice and juicy, fairly spicy. They are now on our regular rotation!

This was hot, but my husband said it might be his new favorite. I used boneless chicken and it might have absorbed more of the seasoning.
