Description

A delicious take on a Hard Rock recipe I saw but never ordered, and have been dreaming about ever since.

Ingredients

  • 8 whole Flour Tortillas
  • Butter Or Margarine
  • 2 cups Grilled Pineapple, Sliced
  • 3 whole Boneless, Skinless Chicken Breasts
  • Salt And Pepper, to taste
  • 3 cups Monterey Jack Cheese, Grated
  • 1 whole Jalapeno, Sliced
  • Cilantro
  • 3 Tablespoons Barbecue Sauce

Preparation

(To grill pineapple: cut wedges, stick on skewers, and grill over low heat. Cut into slices.)

(To pound chicken, place inside a Ziploc bag and pound with a mallet or large can to flatten to uniform thickness.)

Sprinkle with salt and pepper and Cajun spice (or cumin/cayenne, etc.) Drizzle olive oil on a grill pan and grill on both sides until done, brushing with barbecue sauce. Set aside and slice into very thin slices.

Warm griddle over medium heat and put sizzling butter or margarine in the pan. Slightly warm and toast tortillas on both sides, then remove from griddle and set aside.

To assemble, sprinkle four browned tortillas with grated Monterey Jack. Arrange chicken slices evenly over the surface. Add pineapple slices and jalapeno slices. Sprinkle on cilantro. If desired, drizzle extra barbecue sauce over the top. Add second browned tortilla on top of each one. (You’ll have four complete quesadillas at this point.)

Add to oven to warm, or back to skillet to warm, until cheese is melted. Cut each quesadilla into six wedges. Serve with sour cream, pico de gallo, and lime wedges.

Just made these for dinner. Talk about YUM! It’s so hard making something the whole family will eat. My 4YO has just graduated into the finicky eater category, and even she ate them. We took out the jalapenos and added spanish rice. A definite staple in the recipe book. P-Dub does it again!

This is my new favorite meal. I like to mix up some fresh salsa with a little sour cream and spread it on the tortilla before I add teh toppings. I also add cilantro. I left off the jalepenos, but it was still delicious!

These were so good! I was skeptical about the cajun seasoning, but I got out-voted and mixed with everything else they were wonderful. Equally good the second day, too!

These were pretty good. I would probably make them again if I had the ingredients on hand, but I didn’t think they were so special that I’d go out of my way to have them.

Fantastic! I made these for dinner last night, and we devoured them! I don’t like bbq, so instead of that I used a spicy asian chili sauce. Very yummy. I also marinated the chicken in pineapple juice (I used canned pineapple, so sue me!), lemon juice, soy sauce, and lemon pepper for about 30 minutes before grilling. Made the chicken so good, I almost just ate that straight without the quesadilla part! Also, I added avocado to mine. Again, such a wonderful recipe, Ree!!!

PS: I actually want to give you 10 ovenmitts, not just 5 :)

I love being able to prep it all way in advance! Assembly line (aka putting children to work) makes it fun and cheese melts in the oven as we set the table. Delicious, happy, and bright! I always look forward to making this recipe. Also, one of my favorite pizzas (CPK inspired) can be made with the planned extras.

Good, my husband and daughter left them (I left the jalepenos off of hers), but there was just a little something missing for me. Maybe the sweetness wasn’t quite there as much as I had hoped? I’m going to try them again with a honey bbq sauce next time around instead of the plain bbq that I used for this test run.
