Bite-sized pheasant dipped in pancake batter and fried.
Preheat frying oil to 375 degrees.
Cut pheasant breasts into bite-sized pieces. Prepare pancake batter with Sprite instead of water.
Dip pieces into batter and then fry. Fry each side for about 2 minutes or until golden brown. Remove from oil and place on a cooling rack or paper towel to drain. Sprinkle with salt.
Serve warm and refrigerate leftovers.

This was great, and a real kid pleaser. They didn’t even know it was pheasant!! Trying it tonight with Chicken!!
I did have to add more than half a can of soda though!
