Description

A simple weeknight dinner, no matter how busy you are! Just dolled up with these ingredients but feel free to use mozzarella and pepperoni!

Ingredients

  • 4  Flatout Bread Wraps
  • 16 ounces, fluid Pizza Sauce
  • 5 ounces, fluid Goat Cheese
  • 1  Peach, Diced
  • 6 slices Capicola, Sliced Into Strips
  • 1 bunch Baby Bok Choy, Washed, Sliced, And Sautéed
  • ½ teaspoons Dried Oregano
  • Balsamic Glaze (or Reduce Your Own), For Drizzling

Preparation

Preheat oven to 350ºF.

Lightly spray each side of the flatout bread with nonstick spray. Place the flatouts side by side on a cookie sheet. Bake in oven for 7-10 minutes.

Remove from oven and spoon pizza sauce onto each flatout. Use desired amount of sauce and spread evenly over the bread/crust.

Add goat cheese, peach, capicola, and bok choy. Sprinkle dried oregano over the top, drizzle with balsamic glaze. Put back in the oven for about 12 minutes. (The capicola should sizzle a bit and start to crisp up.)

Remove, slice, and enjoy!

Delicious and easy! I made a few minor changes to the recipe based on what I had in the house. Instead of capicola I used prosciutto and used frozen chopped spinach instead of bok chou. I also sprinkled the top with some crushed red pepper. The combination of the goat cheese and the balsamic glaze is amazing.
