Description

A quick and easy supper or lunch that helps clear out leftover veggies from the fridge. Kid approved!

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 3 cloves Garlic, Minced Or Finely Chopped
  • ½ cups Onion, Chopped
  • 1 cup Broccoli, In Small Pieces
  • 1 whole Red Pepper, Sliced
  • 1 pound Cooked Shrimp (large Size)
  • 2 whole Oranges, Small Size, For Juice And Zest
  • 3 Tablespoons Teriyaki Sauce
  • 1 teaspoon Brown Sugar

Preparation

In a large skillet or saute pan over medium high heat, saute the garlic and onions in the olive oil until they just start to soften, about 3 minutes. Add broccoli and red pepper and saute for another 5 minutes until they start to soften. Add the zest of the orange, the orange juice, the teriyaki sauce, and brown sugar. Continue cooking until the sauce is to your liking. At the last minute, add the shrimp and saute until they are heated. Do not overcook the shrimp.

Serve over rice or pasta.

Made this for dinner. My boys and I loved it. I am a pretty inexperienced (read not adventurous) cook, but found this was a very easy recipe to follow. It tasted so good. Will definitely be making this again – at the strong request of my boys.
