Description

This Easy Greek Chicken is quick, healthy, and really darn delicious!

Ingredients

  • 2  Boneless, Skinless Chicken Breasts
  • FOR THE DRY RUB:
  • ½ teaspoons Garlic Salt
  • ½ teaspoons Dried Basil
  • ½ teaspoons Dried Oregano
  • ¼ teaspoons Ground Cinnamon
  • ¼ teaspoons Ground Black Pepper
  • ¼ teaspoons Dried Parsley
  • ¼ teaspoons Dried Rosemary
  • ¼ teaspoons Dried Dill Weed
  • ¼ teaspoons Dried Marjoram
  • ⅛ teaspoons Ground Thyme
  • ⅛ teaspoons Ground Nutmeg
  • FOR THE TOPPING:
  • ½ cups Diced Cucumber
  • ½ cups Diced Grape Tomato
  • ¼ cups Kalamata Olives, Chopped
  • ¼ cups Artichoke Hearts, Chopped
  • ¾ cups Feta Cheese, Cubed Or Crumbled
  • 1 Tablespoon Balsamic Vinaigrette Or Any Oil And Vinegar Based Vinaigrette
  • Ground Black Pepper To Taste

Preparation

Preheat oven to 375ºF.

Combine all of the dry rub ingredients in a small bowl. With your hands, rub chicken breasts thoroughly with dry rub.

Bake chicken breasts for 30 minutes or until cooked through and juices run clear.

Mix all the topping ingredients together in a small bowl. Once chicken is cooked, top both breasts off with topping and serve.
