Description

Tender, tangy venison burgers made in the Swedish fashion (but without all those pickled beets!)

Ingredients

  • 1 pound Venison (pre-ground With Pork Fat)
  • 1 Tablespoon Capers
  • 2 Tablespoons Spicy Bread And Butter Pickles, Minced
  • ½ teaspoons Fresh Dill
  • 2 Tablespoons Apple Cider
  • 1 Tablespoon Steak Or Grill Seasoning
  • 1 whole Egg
  • 1 cup Crushed Whole Wheat Cracker Or Bread Crumbs
  • 4 cups Baby Arugula
  • 4 Tablespoons Goat Cheese Crumbled
  • 4 Tablespoons Pomegranate Arils
  • 1 teaspoon Cracked Black Pepper

Preparation

In a large bowl combine the first 8 ingredients (venison through bread crumbs) by hand, until thoroughly combined. Form into 4 large patties. Cover and let them stand until ready to use.

Preheat a grill to medium-high heat. Once it’s hot add the patties. Grill them for 6-10 minutes on each side, or until cooked to your preferred temperature.

Serve patties on top of a bed of arugula, topped with goat cheese, pomegranate arils and black pepper.
