Description

Tacos in a bowl, perfect for cold evenings cuddled up by the fire!

Ingredients

  • 1 pound Ground Turkey
  • 2 pounds Ground Beef
  • 3 cups Onion, Chopped
  • 3 cups Red Kidney Beans
  • 2 cups Pinto Beans, Drained
  • 2 cups Shoepeg Corn Drained
  • 1 cup Stewed Tomatoes
  • 1 cup Tomatoes With Diced Chiles- I Use Rotel
  • 1 cup Red Bell Pepper, Diced
  • 1 ounce, weight Dry Ranch Salad Dressing Mix
  • 1 ounce, weight Dry Taco Seasoning Mix
  • 2 cups Chicken Stock

Preparation

Brown turkey and ground beef. Add chopped onion to the meat mixture and cook until the onions are translucent.

Add remaining ingredients, along with the meat, to a crock pot. Cook on low for 4–6 hours.

I have a recipe very similar to this one, it adds black beans as well, and we love it!!! My favorite soup!

I made this tonight, but revised it according to our tastes and it turned out awesome! I left out the rotel tomatoes with green chilis and only used ground beef. I also used regular corn and added an extra package of the taco seasoning and ranch dressing dry mix for more flavor. I also added my own seasonings, which included chili powder, cumin, garlic, and onion salt. I definitely recommend this recipe!

Made this tonight. Delicious! We added frito corn chips and a little shredded cheddar cheese. My family loved it!
