This was so yummy. I’ve made a few barbacoa recipes and this was the easiest and most tasty. I was pressed for time and cooked it on high for 4 hours instead of low for 8. It still came out good but I would not recommend it. My mistake. The meat comes out much better slow cooked on low. Great as leftovers, too!

This quickly became a family favorite, and my go-to crockpot recipe. I add a few more peppers and dribble in a smidge of the adobo to kick it up a bit. Whrn I make this, I usually mix up 3-4 batches of sauce, the freeze it with or without the beef so that it’s even easier to whip up. We enjoy this as oft tacos, in rice bowls, and especiallty as nachos (drained a bit first).

I had everything except the chipotle peppers, so I subbed a few pickled jalapenos. It was still fantastic and the smell is out of this world. I love LaurelH’s idea of making enchiladas from the leftovers. Thanks for a great recipe!

Have made this recipe twice now (once in the crock pot and once in a Dutch oven on the stove) and LOVE it! We’ve eaten it as tacos, then as quesadillas out of the leftovers once and then topped off bean tostados a second time. Definitely a new go to recipe for our family of five.

Hands down, my family’s favorite crockpot meal! I make several batches of the sauce/marinade at a time and freeze it with or without the beef added, so it’s crazy easy to pull out and toss in the crockpot on busy days. Our favorite use for leftovers is to spread the rice on tortilla chips, top with the beef (drained a bit) and some cheese, then popped in the oven long enough to make it nice and bubbly….YUMM!

Barbacoa with cilantro lime rice is my fav from Chipotle…. Can’t wait to try this out!!

Just found this site. Great site!!!
With that said, I always use beef broth with beef. It really comes down to personnel choice. I use to cook for many years professionally, but being a person on the go, I don’t have the time to do broths. I’ve always saved , and used the broths from meals that have been cooking for well over 8+ hours in my crock pot, and that broth always turns out to be over the top! Because the flavors mesh over time. Once again great site will tell people!

I always have chicken broth on hand. I suppose you can try beef broth, I just don’t ever use it! Enjoy!

this is the very best way to prepare an inexpensive cut of meat, I do this a lot. My question is why chicken broth and not beef? Thanks
