Description

A great go-to for Sunday dinner or company, and yet so easy! Serve with white or wild rice.

Ingredients

  • 8 pieces Boneless, Skinless Chicken Breasts (about 2 1/2 Lbs.)
  • 4 ounces, weight Dried Beef
  • 8 slices Bacon
  • 1 can Cream Of Mushroom Soup (10 3/4 Oz.)
  • 1 cup Sour Cream

Preparation

Spray 9 x 13 pan with cooking spray. Place dried beef evenly over bottom of pan. Wrap 1 slice of bacon around each chicken breast and place on top of dried beef. Mix can of cream of mushroom soup with sour cream and spread over top of chicken. Bake, uncovered, at 275F degrees for 3 hours.

Serve chicken and sauce over rice. Yum!

I have been making this one for years (got it out of an old Community cookbook – it was called Lillie Mae’s Chicken Casserole). It is so very good! Might sound like an odd dish to some, but trust me – this is delicious.

This meal was very salty and rich. The flavor mix was good, but it was overkill. I’d really like to see if this couldn’t be adapted to be lighter and less salty.

Gosh – I’d forgotten all about this dish – used to make it years ago for pot luck dinners at church:)
