Description

A great recipe that the Italian restaurant Carrabas serves.

Ingredients

  • FOR THE CHICKEN:
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Black Pepper
  • ½ teaspoons Salt
  • 6 whole Chicken Breasts
  • 6 ounces, weight Goat Cheese
  • _____
  • FOR THE SAUCE:
  • 2 Tablespoons Butter
  • 1 Tablespoon Yellow Onion, Chopped
  • 1 Tablespoon Garlic, Chopped Finely
  • ½ cups Dry Red Wine
  • ¼ cups Lemon Juice
  • 8 Tablespoons Unsalted Butter, Cold
  • 1 cup Sun-dried Tomatoes, Sliced
  • ¼ cups Basil, Chopped
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper

Preparation

Preparation for chicken:

Rub the olive oil, pepper, and salt on both sides of chicken breasts. Place chicken in a large sauce pan on medium heat to cook. Depending on the size of the chicken, it could take anywhere from 25-35 minutes. Make sure it’s not pink and is cooked all the way through. In the last few minutes of cooking, add an ounce of goat cheese to each piece.

Preparation for sauce:

In a medium sauce pan, place the butter and onions on medium heat and cook for about 5 minutes. Then add garlic, red wine, and lemon juice. Increase the heat just a little bit and simmer the sauce. After 4-5 minutes, add butter one tablespoon at a time; stir until melted. Now add sun-dried tomatoes, basil, salt and pepper and stir.

When plating, add the chicken and then top with the sauce and sun dried tomatoes.

Made this last night for dinner and it was wonderful! We love this at Carrabbas and it was pretty close to theirs. Even my kids ate it, which is really the test.
