Description

Melt-in-your-mouth chunks of slowly braised pork. Omg. Heaven!

Ingredients

  • 3 pounds Pork Shoulder, Cut Into Cubes
  • 2 cups Beef Stock
  • 2 cups Orange Juice
  • 14 ounces, weight Salsa

Preparation

Preheat oven for 450 degrees.

In a large oven proof saucepan combine the cubed pork, stock, orange juice and salsa. This mixture should totally cover the pork; if not, add a little water until the pork is submerged. Bring to a boil. Once boiling, reduce heat to medium low and simmer with the lid on for 3.5 hours, at which point the pork should be falling apart to the touch.

Drain the liquid from the pork. Using a fork, gently pull apart the meat in the bottom of the oven proof saucepan. Place the pan into the oven for 20 minutes for the pork to caramelize.

Carefully remove the pan from the oven. Sprinkle with a pinch of kosher salt. Serve the carnitas with corn or flour tortillas, any kind of salsa and of course guacamole!

Delicious & easy! I used my dutch oven on the stove top and it simmered for about 3 hours with the lid on. Very tender and I like the idea of caramelizing the pork a bit in the oven before serving.
