Description

All the yummy flavors of Buffalo chicken blended into one tasty and easy meatloaf!

Ingredients

  • FOR THE MEATLOAF:
  • 1-½ pound Ground Chicken
  • 1 cup Plain Dried Bread Crumbs
  • ⅓ cups Gorgonzola Cheese
  • ⅓ cups Celery, Diced (1/3 Cup Is About 1 Rib)
  • ¼ cups White Onion, Diced
  • ½ cups Milk
  • ½ cups Hot Sauce (Buffalo Style)
  • 1  Large Egg
  • ½ teaspoons Salt
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Dried Parsley
  • ¼ teaspoons Dried Dill Weed
  • 1 pinch Ground Black Pepper
  • FOR THE TOPPING:
  • 3 Tablespoons Hot Sauce (Buffalo Style)
  • 2 Tablespoons Crumbled Gorgonzola Cheese

Preparation

Preheat oven to 350 F. Spray a 9×5 or similar sized loaf pan with cooking spray and set aside.

In a large bowl mix ground chicken, breadcrumbs, celery and onion.

In a small bowl whisk milk, hot sauce, egg, salt, garlic powder, parsley, dill and pepper. Pour wet ingredients into chicken mixture and mix until combined.

Place mixture into prepared loaf pan and firmly press. Brush the top with the remaining hot sauce and bake in preheated oven for 1 hour or until internal temperature reaches 165 F.

Remove pan from oven. Sprinkle with additional Gorgonzola cheese then put pan back in the oven and continue to cook until cheese is melted, about 5 minutes. Remove from oven and let it sit for 10 minutes before serving.

Wow, this looks good. I don’t think I have ever seen ground chicken, but I will be asking for it at Publix next week. Thanks so much for contributing this as we absolutely love buffalo chicken!

AMAZING. I was craving the Buffalo Chicken sauce, but I’m not a wing fan. This was perfect! What a good kick. Very simple to make for a weeknight and have leftovers for lunch. Very yummy cold for sandwiches! Thank you, Jennifer! :)
