Description

Even as a Montana native, I do realize what Fat Tuesday is all about. Indulgence, right? But if you have been trying really hard to make healthy lifestyle changes in the new year, why blow it all for one day if you don’t have to sacrifice any flavor by eating healthy?

Ingredients

  • FOR THE FISH:
  • 1 Tablespoon Cajun Crab Boil Seasoning
  • 1 teaspoon Paprika
  • ½ teaspoons Fennel Seeds
  • 2 whole Tilapia Fillets, About 4 Oz. Each
  • 1 teaspoon Olive Oil
  • 4 whole Romaine Lettuce Leaves
  • 2 whole Tortillas
  • 1 whole Vine Ripe Tomato, Seeded And Chopped
  • FOR THE SPICY AIOLI:
  • ¼ cups Plain Low-fat Yogurt
  • 1 teaspoon Adobo Sauce, Or To Taste

Preparation

Preheat grill or oven to 400ºF.

Mix together cajun boil, paprika, and crushed fennel seeds. Rub each tilapia filet with 1/2 teaspoon olive oil, then liberally rub in half of the seasoning mixture into each fillet (both sides). Wrap each filet with a double layer of aluminum foil. Place fillets on grill or in the oven for 12-15 minutes, until fish is flaky.

While fish is cooking, whisk together aioli ingredients and place into the refrigerator until ready to use.

To serve, place 2 lettuce leaves into the middle of a tortilla. Spoon on 1 tablespoon aioli onto the leaf, then top with a cooked fillet. Sprinkle with chopped tomatoes and an additional 1 tablespoon aioli. Wrap tortilla around ingredients and serve!

I just made this for dinner and the hubby and I loved it! My only sub was that I didn’t have adobo sauce nor the correct peppers to make it. I found a tip online to use a bit of tabasco sauce and smoky BBQ sauce in place of the peppers…whether it was “correct” or not…it was delicious! Thanks for the delicious and healthy recipe!
