Description

Use up those small pieces of tortilla chips in the bottom of the bag with this easy take on enchiladas! We save our bags up until we have enough for this recipe.

Ingredients

  • 1-½ cup Crushed Tortilla Chips
  • 2 cups Enchilada Sauce
  • 1 pound Ground Beef, Cooked And Crumbled
  • ¾ cups Cheese (we Use Cheddar)

Preparation

1. Preheat oven to 400ºF.

2. Grease a 2-qt. casserole. Layer half the crushed chips on the bottom of the pan.

3. Mix half the enchilada sauce with ground beef and layer on top of the chips.

4. Sprinkle 1/2 cup cheese on top of the beef.

5. Sprinkle the rest of the chips, pour remaining enchilada sauce over the chips, and sprinkle the remaining cheese on top.

6. Bake for 8–10 minutes, until bubbly and cheese is melted.

Excellent dish that is super easy and delicious. Made my own enchilada sauce and may add beans and/or rice next time. If your sauce mixture is too soupy, just take a little corn starch and add a bit of cold water, mix well and add it to your sauce & meat mixture. It will thicken up for you. Will be making this again!

I make this recipe all the time to use up stale tortilla chips. It is very easy too and the kids love that it is simple without lots of veggies.

A definite 5 mitt recipe! I used more than 2 cups of enchilada sauce so it was a bit soupy (100% my fault) but it was extremely tasty. Everyone enjoyed it! It was really good served over a green salad.
