Description

Chicken stuffed with bacon and mozzarella. What’s better than that? It was cooked for me. Oh yeah!

Ingredients

  • 3 whole Boneless Chicken Breasts, Rinsed And Pat Dry
  • 6 slices Bacon (We Used The Pre-cooked Boar's Head Brand.)
  • A Handful Of Shredded Part-skim Mozzarella Cheese For Each Chicken Breast

Preparation

Preheat oven to 350ºF.

Rinse chicken and pat dry with a paper towel. Cut a pocket into the side of each chicken breast and then stuff each breast with 2 slices of bacon and a handful of cheese.

Bake in a glass dish sprayed with cooking spray for about thirty minutes and then check every five or six minutes. Ours was done in about forty minutes. Feel free to add seasonings, but between the bacon and cheese, we didn’t feel like it needed anything.

This is very good. I lightly coated the chicken breasts in a flour/salt/red pepper flake mixture and drizzled about 2 tbsp of butter on top before sticking in the oven. I served with baked potatoes and mixed veggies. Yum!
