Description

Creamy elegant pasta with a punch of flavor!

Ingredients

  • ½ pounds Pasta
  • 1 whole Avocado
  • ½ whole Lemon
  • 2 cloves Garlic
  • ½ teaspoons Kosher Salt
  • ¼ cups Basil
  • 2 Tablespoons Olive Oil
  • 1 dash Fresh Ground Pepper
  • 1 Tablespoon Fresh Grated Parmesan

Preparation

Boil water and cook pasta according to package directions.

Scoop avocado out of skin and discard the seed. Cut avocado into chunks and add to a food processor.

Zest the lemon and add zest and juice to the processor. Add garlic, salt and basil to the processor. Blend for a few seconds then slowly add in olive oil. Blend until creamy.

Drain pasta. Mix pesto into pasta and serve with a garnish of Parmesan and fresh ground pepper.

I have made this in the past and it is a family favorite…if you think this sounds yummy, add some crispy fried crumbled pancetta or bacon!

I subbed some leftover pesto (frozen in cubes from last summer) for the basil/garlic/salt and added some chunked roma tomatoes. Absolutely delicious, super easy, and crazy fast!! I’ve made avocado sauces for pasta before, but have never been as impressed as I was with this basil-y version! I’ll be making this again!

I had 2 avocados that were pretty darn close to being overripe, so I hopped on TastyKitchen, to see if there were any good recipes (that weren’t guacamole). I’m so glad I did.. this was absolutely yummy, and will be a favorite, in this house! Thank you so much for sharing this.
