Description

A vegan yet incredibly creamy (and healthy!) pesto.

Ingredients

  • ½ pounds Spaghetti
  • 2 whole Small Ripe Avocados, Pitted And Peeled
  • 2 cloves Garlic, Peeled
  • ¼ cups Pine Nuts
  • ¼ cups Olive Oil
  • 1 bunch Fresh Basil, Leaves Picked
  • 1 Tablespoon Fresh Lemon Juice
  • Halved Cherry Tomatoes, To Serve (optional)

Preparation

1. Cook the pasta in a large pot of boiling water.

2. While the pasta cooks, mix all the other ingredients in the bowl of your food processor, until smooth.

3. Serve the warm pasta mixed with the sauce, and a few halved cherry tomatoes, if desired.
