Description

Sweet and salty and extremely easy, bust out the BBQ and give this a try.

Ingredients

  • FOR THE MARINADE:
  • 2 whole Pork Tenderloins, Trimmed
  • 2 Tablespoons Green Onions, Sliced
  • 2 Tablespoons Hoisin (or Plum Sauce)
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Honey
  • 1 Tablespoon Hot Water

  • FOR THE SMASHED SWEET POTATOES:
  • 2 whole Sweet Potatoes (or 3)
  • 2 Tablespoons Half-and-half
  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Orange Zest And The Juice Of Half And Orange

Preparation

Salt and pepper the pork and place in large Ziploc baggie. Whisk the sauce ingredients and add half to the pork in the bag. Marinate while your grill is preheating. Grill until done, about 15-20 minutes.

Wash the potatoes and poke a bunch of holes in them. Bake them at 350 degrees for an hour, or, do what I did and stick them in the microwave for about 7 minutes or until tender. Let them cool a bit and then slice them in half and scoop out the pulp. Smash up the potato pulp with the other ingredients in the bowl and season with salt and pepper.

Let the pork rest for 10 minutes after it comes off the grill. Slice and drizzle with the reserved sauce. Serve with sweet potatoes and a green veggie. We had broccoli and it felt right.
