Description

These. Are. So. Good. The entire family will love them. Even your dog. But don’t give them to your dog, eat them yourself!

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 cup Panko Breadcrumbs
  • ½ cups Roasted Almonds, Chopped
  • ¼ cups Parmesan Cheese
  • ¼ cups Dijon Mustard
  • 1 Tablespoon Honey
  • Salt And Pepper, to taste
  • Olive Oil, To Coat Pan And Drizzle On Chicken

Preparation

Preheat your oven to 425 degrees and stick your sheet pan in. Meanwhile, mix the panko, almonds, cheese, salt and pepper in a shallow dish. In another dish, mix the mustard and honey. Cut the chicken breasts into strips. Dredge the chicken strips in the honey-mustard and then generously coat them in the almond mixture. Place on a separate plate until they are all done. When they’re ready for the oven, grab your now-hot pan and drizzle it with olive oil. Then put all the chicken on it and drizzle the chicken with a little more olive oil. Cook until done (about 20 minutes), flipping them once about halfway through.

I substituted the almonds for pecans and they turned out so tasty.

Something must have gone terribly wrong when I made these last night! I was really excited about these because they seemed simple and had gotten such great reviews from everyone. I followed the directions, but my tenders didn’t get that crispy and and the coating came off as we were trying to eat them. Flavor was kind of blah. I don’t know what happened to mine, but I don’t think I’ll try them again.
