Low Carb Chili Dinner

by Sophie and filed in Low Carb, Special Dietary Needs

A tasty and filling dinner with reduced carbs and with tons of nutrients. It’s a healthy spin on chili, but still comfort, one-bowl food.

Cheesy Summer Squash Bake

by debdaamazon and filed in Low Carb, Special Dietary Needs

I was inspired by the Penzey’s catalog to try this. I’ve tweaked it a bit to add more herbs and convert it to low carb. So yummy!

Low Carb Jalapeno-Cheddar “Corn” Bread

by debdaamazon and filed in Low Carb, Special Dietary Needs

I made George Stella’s Almond Flour Pound Cake one night and like the texture so much I decided to change it to something more savory. In texture, it reminds me of cornbread a little, but using almond flour instead greatly lowers the carb count. Regardless of dietary needs, this bread is just darn tasty.

Not Your Traditional Caesar Salad

by Tina and filed in Low Carb, Special Dietary Needs

Traditionally Caesar dressing is rich and calls for anchovies, which are loaded with sodium. My version uses kipper (herring) which still has that salty fish yummy flavor but without the sodium. Also, since I leave the fish chunky, the protien works as a meal.

Meet Nancy

Nancy is the Coupon Clipping Cook, which means she not only has an astounding number of recipes to share with us (her TK recipe box is busting at the seams!) but she's also got loads of money-saving tips in her blog (she worked at a grocery store for a number of years, so she knows her stuff). She has some pretty amazing creations, like Roasted Garlic Potato Soup and Nutty Coconut Chicken. Go check them out!

Meet Heather

Heather is a Texas native and the blogger behind Heather's Dish. She's mom to Weston, wife to Nate, and they live in Little Rock, Arkansas with their two "stubborn and saucy" dogs Bunker and Keira. In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
