There are just some foods that feel good in your mouth. To me, orzo is one of them. This is good either hot or cold.
There are no real measurements to this recipe. Add more of what you like, less of what you don’t have at hand or care for. I had just picked the tomatoes from outside and wanted to have them with bacon, and the orzo came to mind. The pineapple and balsamic add a sweet savory touch.

I know, the name. It’s what my dad has always called it because, “It’s so good, when I die I want my casket filled with this, so I can take it with me.”
I thought about posting something less… well, ominous, for a name. Something like “Strawberry-Banana-Pineapple Jello Salad”, but it just didn’t feel right. So, Casket Jello it stays.
“Asian-inspired” salad that is OUT OF THIS WORLD. Give this to even the pickiest eaters and they will love it! My brother originally commented, “Yuck, cabbage salad … ” Now he requests this every time I have to bring a dish to pass.

This is one of my favorite easy-to-make salads for the summer. I love caprese sald with angel hair, but I never found it easy to bring to potlucks. This salad is perfect for tomato, basil and mozzerella lovers and is perfect for summer picnics. Enjoy!
